Marinated Tofu Kebabs

GF, DF, V + RSF - serves 4

Ingredients:

  • 275g firm organic tofu

  • 2 tbsp tamari

  • 2 tbsp coconut aminos

  • 250g cherry tomatoes

  • 16 small button mushrooms destemmed

  • 1 capsicum sliced into square chunks

  • Olive oil

  • Salt and pepper

  • 200g spinach

  • 1/2 lemon

  • 8 skewer, soaked for a few hours

Method:

  1. In a medium mixing bowl add the coconut aminos and tamari. Pour half the mixture into a small bowl.

  2. Slice the tofu into cubes and add to the medium mixing bowl. Carefully mix the tofu in the sauce and place in the fridge preferably for a few hours.

  3. In another mixing bowl add the whole cherry tomatoes, capsicum and mushrooms. Drizzle over 1 tbsp olive oil and season with salt and pepper.

  4. To assemble the skewers place on 2 mushrooms, 3 pieces of tofu, 2-3 cherry tomatoes and 2-3 pieces of capsicum in any order.

  5. Heat a frypan to a medium-low heat and add a drizzle of olive oil.

  6. Cook the skewers for around 4 minutes each side. Using the other half of the sauce, drizzle over as they cook.

  7. While this cooks add the spinach to a bowl and squeeze over the lemon juice and divide amongst 4 plates.

  8. Once the skewers are cooked place on top of the spinach and enjoy!
