Summer Peach Crumble

GF*, DF, V + RSF - serves 2

Ingredients:

Filling:

  • 5 peaches rinsed

  • 1 1/2 tbsp coconut sugar

  • 2 tbsp lemon juice

  • 1/2 tsp cinnamon

  • 1/4 tsp vanilla extract

  • Pinch of pink salt

Crumble:

  • 1 cup quick oats*GF or quinoa flakes

  • 1/2 cup almond meal or ground almonds ( I like to leave some chunks)

  • 1/4 cup desiccated coconut

  • 1/8 cup coconut sugar

  • 1/2 tsp cinnamon

  • Pinch of pink salt

  • 1/4 cup melted coconut oil

  • Coconut yogurt to serve

Method:

  1. Preheat your oven to 170 degrees C and grease a small pie dish.

  2. Dice your peaches and disregard the pit, add to a mixing bowl along with the rest of the filling ingredients. Stir and set aside.

  3. In a separate bowl add all the crumble ingredients adding the coconut oil last and mix well.

  4. Pour the peach mixture and any juices into the pie dish.

  5. Top with the crumble. Place in the oven and bake for around 45 minutes or until golden and bubbling.

  6. Serve warm with a dollop of coconut yoghurt.
