Zesty Salmon Tacos

GF, DF + RSF - serves 4

Ingredients:

  • 2 salmon fillets skin off

  • 1 tbsp coconut aminos

  • 1/2 tbsp tamari

  • 1/2 tbsp lime juice

  • GF wraps (8)

Salad:

  • 1 1/2 cups shredded purple cabbage

  • 1 carrot grated

  • 1 1/2 cups shredded lettuce

  • 1/3 cup chopped coriander

  • Juice of 1/2 lime

Salsa:

  • 1 tomato diced

  • 1/2 lebanese cucumber diced

  • 1 tbsp diced red onion

  • 1 tbsp lime juice

  • Salt and pepper

Method:

  1. Add your salmon in a bowl with the coconut aminos, 1/2 tbsp lime juice and a sprinkle of salt and pepper.

  2. Add to a medium-low heated frypan and cook until golden and cooked through turning to cook each side around 15 minutes.

  3. While this cooks add all your salad ingredients into. mixing bowl and mix well. Set aside.

  4. Now add all your salsa ingredients into a bowl and mix. Set aside.

  5. When your salmon is done, turn off the heat and break up the salmon.

  6. Assemble your tacos and enjoy!
