Pear and Walnut Muffins
GF, DF, V + RSF - makes 10
Ingredients:
1 cup GF self raising flour
1/2 tsp ground cinnamon
4 tbsp coconut sugar
Pinch of salt
2 eggs
1 tsp vanilla extract
1/4 cup melted coconut oil
1/4 cup almond milk
1/2 pear diced
Method:
Preheat your oven to 180 degrees C and grease a muffin tray.
In a mixing bowl add the flour, coconut sugar, cinnamon and salt and mix.
In a separate bowl add in the rest of the ingredients and whisk.
Now add the wet ingredients into the dry and mix well.
Pour mixture into your muffin tray and bake for 20 minutes or until a skewer comes out clean.
Let cool in the tray before removing.
