Breakfast Bagel

INGREDIENTS:

  • 1 bagel (GF if needed)

  • 1 rasher of bacon

  • 1 egg

  • 1/2 tomato slices

  • 1/4 avocado

  • 1 tbsp goats cheese or feta

  • 1/2 tsp diced chives

  • Spinach leaves

  • Salt and pepper

  • Chilli flakes

METHOD:

  1. In a heated frypan, add a dash of oil and crack in the egg. Season with salt and pepper. Cook for a couple minutes before flipping. Cook to your liking.

  2. While this cooks, add in the bacon and cook to your liking.

  3. As these finish cooking, lightly toast your bagel. Once toasted, spread over the avocado and sprinkle the chives on one half and the feta and a light sprinkle of chilli flakes on the other half. Season.

  4. Now, layer the tomato, bacon, egg and spinach.
