Beef Strips in Cream Sauce

INGREDIENTS:

  • 500g beef strips

  • 2 tbsp gf/plain flour

  • Salt and pepper

  • 1 medium broccoli, florets cuts

  • 1 small carrot, thinly sliced

  • 2 cups sliced mushrooms

  • 1 small onion, diced

  • 2 garlic cloves, finely diced

  • 350ml passata

  • 100ml coconut cream

  • 2 tbsp coconut aminos

  • 2 tsp tamari

  • 2 tsp veg stock powder or cube

  • 2 large potatoes, peeled and quartered

  • 3 tbsp almond milk

METHOD:

  1. Place the beef strips, flour and a good pinch of salt and pepper into a bowl. Coat the beef well in the flour.

  2. Meanwhile bring a pot of salted water to a boil and add the potatoes and cook until soft enough to put a fork through.

  3. While this cooks add on the steamer basket and place in the broccoli and carrot and steam until soft but still slightly firm.

  4. While this cooks add a splash of olive oil to a medium heated pan and add the beef strips. Cook until browned then set aside.

  5. Now add in the onion, garlic and mushrooms. Sautee for around 3 minutes.

  6. Add in the passata, coconut cream, coconut aminos, veg stock, tamari and stir. Bring to a simmer for 5 minutes.

  7. Add in the beef strips, broccoli and carrot into the sauce and reduce heat to a low simmer.

  8. While this simmers, drain the potatoes. Add the almond milk and season with salt and pepper. Add a dash more milk if needed. Mash until smooth.

  9. Serve and enjoy! Add some chopped parsley for extra flavour.
