Beef Strips in Cream Sauce

INGREDIENTS:
500g beef strips
2 tbsp gf/plain flour
Salt and pepper
1 medium broccoli, florets cuts
1 small carrot, thinly sliced
2 cups sliced mushrooms
1 small onion, diced
2 garlic cloves, finely diced
350ml passata
100ml coconut cream
2 tbsp coconut aminos
2 tsp tamari
2 tsp veg stock powder or cube
2 large potatoes, peeled and quartered
3 tbsp almond milk
METHOD:
Place the beef strips, flour and a good pinch of salt and pepper into a bowl. Coat the beef well in the flour.
Meanwhile bring a pot of salted water to a boil and add the potatoes and cook until soft enough to put a fork through.
While this cooks add on the steamer basket and place in the broccoli and carrot and steam until soft but still slightly firm.
While this cooks add a splash of olive oil to a medium heated pan and add the beef strips. Cook until browned then set aside.
Now add in the onion, garlic and mushrooms. Sautee for around 3 minutes.
Add in the passata, coconut cream, coconut aminos, veg stock, tamari and stir. Bring to a simmer for 5 minutes.
Add in the beef strips, broccoli and carrot into the sauce and reduce heat to a low simmer.
While this simmers, drain the potatoes. Add the almond milk and season with salt and pepper. Add a dash more milk if needed. Mash until smooth.
Serve and enjoy! Add some chopped parsley for extra flavour.
