Raspberry Chia Pudding

INGREDIENTS:

  • 1/4 cup chia seeds

  • 3/4 cup coconut milk

  • 2 tbsp coconut yoghurt

  • 1/2 tsp maple syrup

  • 1/2 tsp vanilla extract

  • 4 raspberries

  • Extra yoghurt to serve

METHOD:

  1. Add all the ingredients except the raspberries into a bowl and mix well.

  2. Add the raspberries and mash through.

  3. Cover and place in the fridge to set overnight or for 1 hour.
