Beetroot, Walnut and Brown Rice Salad
INGREDIENTS:
1 packet of microwave brown rice and quinoa
250g cooked beetroot
100g spinach and rocket or just spinach
250g cherry tomatoes
1 1/4 cup diced cucumber
70g halloumi or vegan feta*
1 cup chopped walnuts
DRESSING:
1 tbsp EVOO
1 tbsp water
1 tbsp honey or maple syrup*
1 tbsp lemon juice
1 tsp wholegrain mustard
Pinch of salt and pepper
GF, DF + VE* - serves 4
METHOD:
Cook your rice according to packet instructions and let cool.
If using halloumi, slice into 1cm strips and add to a sprayed and heated frypan. Cook until golden both sides.
In a small bowl add the dressing ingredients and whisk together.
Add all the ingredients except the dressing into a large salad bowl and mix together.
When ready to eat, drizzle over the dressing and serve.
Feel free to add a protein to make into a meal
