Beetroot, Walnut and Brown Rice Salad

INGREDIENTS:

  • 1 packet of microwave brown rice and quinoa

  • 250g cooked beetroot

  • 100g spinach and rocket or just spinach

  • 250g cherry tomatoes

  • 1 1/4 cup diced cucumber

  • 70g halloumi or vegan feta*

  • 1 cup chopped walnuts

DRESSING:

  • 1 tbsp EVOO

  • 1 tbsp water

  • 1 tbsp honey or maple syrup*

  • 1 tbsp lemon juice

  • 1 tsp wholegrain mustard

  • Pinch of salt and pepper

GF, DF + VE* - serves 4

METHOD:

  1. Cook your rice according to packet instructions and let cool.

  2. If using halloumi, slice into 1cm strips and add to a sprayed and heated frypan. Cook until golden both sides.

  3. In a small bowl add the dressing ingredients and whisk together.

  4. Add all the ingredients except the dressing into a large salad bowl and mix together.

  5. When ready to eat, drizzle over the dressing and serve.
