Dahl Pumpkin Soup

GF, DF, V + RSF - serves 4

Ingredients:

  • 1 small kent pumpkin chopped skin removed

  • 1 large carrot peeled and roughly chopped

  • 1 small onion diced

  • 2 large garlic cloves diced

  • 1 tbsp grated ginger or 1 tsp ground ginger

  • 2 tbsp curry powder

  • 1 cup red lentils

  • 1 can coconut milk

  • 3 cups vegetable stock

  • 2 tbsp lemon juice

  • Salt and pepper

Method:

  1. In a frypan fry of your onion and garlic in a splash of olive oil and saute for around 3 minutes or until soft.

  2. Add to your slow cooker along with the rest of the ingredients except the coconut milk and lemon juice. Mix well.

  3. Cook on low for 6-8 hours.

  4. Just before serving stir through the coconut milk and lemon juice.

  5. Blitz until smooth and creamy.
