Dahl Pumpkin Soup
GF, DF, V + RSF - serves 4
Ingredients:
1 small kent pumpkin chopped skin removed
1 large carrot peeled and roughly chopped
1 small onion diced
2 large garlic cloves diced
1 tbsp grated ginger or 1 tsp ground ginger
2 tbsp curry powder
1 cup red lentils
1 can coconut milk
3 cups vegetable stock
2 tbsp lemon juice
Salt and pepper
Method:
In a frypan fry of your onion and garlic in a splash of olive oil and saute for around 3 minutes or until soft.
Add to your slow cooker along with the rest of the ingredients except the coconut milk and lemon juice. Mix well.
Cook on low for 6-8 hours.
Just before serving stir through the coconut milk and lemon juice.
Blitz until smooth and creamy.
