Creamy Dreamy Soup
GF, DF, V + RSF - serves 5-6
Ingredients:
2 garlic cloves finely diced
1 leek roughly chopped
1/2 head medium cauliflower
2 potatoes
1/2 medium head broccoli
100g shiitake mushroom (or button mushrooms)
1/4 cup dill
1/2 cup walnuts to top
4 cups chicken broth (use vegetable if vegan)
2 tbsp lemon juice
2 tbsp nutritional yeast (optional)
Olive oil
Method:
In a large saucepan add a good drizzle of olive oil and turn on to a medium/low heat.
Add in the diced leek and garlic and saute for a few minutes.
While this cooks chop your vegetables.
Add in the cauliflower, broccoli, mushroom, potato and a 1/4 tsp salt and 1/4 tsp black pepper. Stir to coat in the leek mixture and let cook for 2 minutes.
Now add in your vegetable broth, stir and bring to a simmer.
Let cook for around 20 minutes.
Once the 20 minutes has passed add in your lemon juice, nutritional yeast if using and the dill. Stir through and let cook for a further 2 minutes.
Now you can blitz your soup until it’s nice and creamy. Taste and add more seasoning if needed.
Top with the walnuts and enjoy!
