Creamy Dreamy Soup

GF, DF, V + RSF - serves 5-6

Ingredients:

  • 2 garlic cloves finely diced

  • 1 leek roughly chopped

  • 1/2 head medium cauliflower

  • 2 potatoes

  • 1/2 medium head broccoli

  • 100g shiitake mushroom (or button mushrooms)

  • 1/4 cup dill

  • 1/2 cup walnuts to top

  • 4 cups chicken broth (use vegetable if vegan)

  • 2 tbsp lemon juice

  • 2 tbsp nutritional yeast (optional)

  • Olive oil

Method:

  1. In a large saucepan add a good drizzle of olive oil and turn on to a medium/low heat.

  2. Add in the diced leek and garlic and saute for a few minutes.

  3. While this cooks chop your vegetables.

  4. Add in the cauliflower, broccoli, mushroom, potato and a 1/4 tsp salt and 1/4 tsp black pepper. Stir to coat in the leek mixture and let cook for 2 minutes.

  5. Now add in your vegetable broth, stir and bring to a simmer.

  6. Let cook for around 20 minutes.

  7. Once the 20 minutes has passed add in your lemon juice, nutritional yeast if using and the dill. Stir through and let cook for a further 2 minutes.

  8. Now you can blitz your soup until it’s nice and creamy. Taste and add more seasoning if needed.

  9. Top with the walnuts and enjoy!
