Muesli Bites
DF, V + RSF
Ingredients:
1 1/2 cups rolled oats
1/2 cup desiccated coconut
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup flax seeds
1/4 cup sultanas
Pinch of pink salt
2 tbsp chia seeds mixed with 1/3 cup water (let sit for 5 minutes)
1/4 cup maple syrup or honey
1/4 melted coconut oil
1 tsp vanilla extract
1/4 cup hulled tahini
Method:
Preheat your oven to 180 degrees C and line a slice tin with baking paper.
In a mixing bowl add all your dry ingredients and mix well.
Now add all your wet ingredients including the chia seeds into another mixing bowl and stir.
Add your we mixture into you dry and mix really well ensuring all the oat mixture is coated. Add 2 tbsp water if needed
Pour the mixture into the prepared tin and press down really firm.
Place in the oven and bake for around 30 minutes or until golden.
Let cool in the pan before removing and breaking into pieces.
Store in an airtight container,
