Chinese Five Spice Chicken
GF, DF + RSF - serves 4
Ingredients:
8 chicken drumsticks
1 tbsp chinese five spice
Salt and pepper
Olive oil
2 medium sweet potatoes
1 tsp paprika
1 bunch broccolini
1 spring onion diced
1 large tomato
1 lebanese cucumber
3 big handful of chopped lettuce
Juice 1/2 lemon
Method:
In a bowl add 2 tbsp of olive oil, the chinese five spice, a good pinch of salt and pepper and whisk.
Add in the chicken drumsticks and coat in the marinade. Cover and place in the fridge.
Preheat your oven to 180 degrees C and line two baking trays.
Peel and cut the sweet potato into chips. Place on one of the baking trays, drizzle with a little olive oil and sprinkle over he paprika and a pinch of salt.
Take your chicken out of the fridge and place on the second baking tray. Place in the oven and bake for 35-40 minutes flipping halfway.
With 25 minutes to go pop in your sweet potato chips.
While this bakes, dice your tomato and cucumber and place in a bowl along with the lettuce.
Trim the ends off your broccolini. With 10 minutes to go add your broccolini and spring onion into a heated frypan with a splash of olive oil and saute until soft but tender.
Add to the salad bowl and squeeze over the lemon juice removing any pits.
Once your chicken and chips are done place you can serve along with your salad.
