Satay Beef Slow Cooker

GF, DF + RSF

Ingredients:

  • 500g casserole beef diced

  • 1 onion diced

  • 2 garlic cloves finely diced

  • 1 cup beef stock

  • 1 medium head of broccoli, florets only

  • 1 red capsicum diced

  • 1 small eggplant diced

  • 1 1/2 cup brown rice

Sauce:

  • 1/2 cup peanut butter

  • 1 can coconut cream (270g)

  • 3 tbsp tamari

  • 1 tbsp maple syrup

  • 2 tbsp lemon juice

Method:

  1. Heat a frypan and add a splash of olive oil. Add your onion and garlic and saute for 3 minutes.

  2. Transfer to your slow cooker.

  3. Add the rest of your veggies, beef and beef stock and stir.

  4. In a bowl add all your sauce ingredients and whisk. Add to the slow cooker, put the lid on and cook on low for 8 hours.

  5. 20 minutes before serving, cook your rice according to the packet instructions.

  6. Once cooked divide and serve.
