Satay Beef Slow Cooker
GF, DF + RSF
Ingredients:
500g casserole beef diced
1 onion diced
2 garlic cloves finely diced
1 cup beef stock
1 medium head of broccoli, florets only
1 red capsicum diced
1 small eggplant diced
1 1/2 cup brown rice
Sauce:
1/2 cup peanut butter
1 can coconut cream (270g)
3 tbsp tamari
1 tbsp maple syrup
2 tbsp lemon juice
Method:
Heat a frypan and add a splash of olive oil. Add your onion and garlic and saute for 3 minutes.
Transfer to your slow cooker.
Add the rest of your veggies, beef and beef stock and stir.
In a bowl add all your sauce ingredients and whisk. Add to the slow cooker, put the lid on and cook on low for 8 hours.
20 minutes before serving, cook your rice according to the packet instructions.
Once cooked divide and serve.
