Strawberry Short Cake

GF, DF, V + RSF - makes around 10

Ingredients:

  • 2 cups almond meal

  • 1/2 cup coconut flour

  • 2 tsp baking powder

  • 1/2 cup coconut sugar

  • 1 cup coconut milk + 1 tsp lemon juice (whisked)

  • 1 tsp vanilla extract

  • 2 eggs

Strawberry Cream:

  • 1 cup coconut yoghurt

  • 1/2 cup strawberries

  • 1 1/2 tbsp chia seeds

  • 1 tsp honey (optional)

Method:

  1. Preheat your oven to 180 degrees C and grease a muffin tray.

  2. In a bowl add all your dry ingredients together.

  3. In a separate bowl add all your wet ingredients and whisk. Pour into the dry and mix really well.

  4. Pour mixture into the muffin tin and place n the oven to bake for around 25-30 minutes or until a skewer comes out clean.

  5. Once done remove and let cool.

  6. To make your strawberry cream add the strawberries, honey if using and coconut yoghurt into. blender and blitz until smooth. Spoon into a bowl and stir through the chia seeds. Let sit for 5 minutes.

  7. Once they have cooled, spoon over the strawberry mixture and enjoy.
