Omega Baked Oats

DF, V + RSF - serves 2-3

Ingredients:

  • 1 cup rolled oats or 1 cup quinoa flakes for GF

  • 1/4 cup chopped walnuts

  • 2 tbsp hemp seeds

  • 1/2 tsp ground cinnamon

  • 1 cup coconut or almond milk

  • 1/2 tsp vanilla extract

  • 1/2 cup mixed berries (frozen is fine) or 1 sliced banana

  • Zest of 1 orange

  • 1-2 tbsp maple syrup

  • Chia egg (2 tbsp chia seeds mixed with 1/4 cup water)

  • Coconut yogurt to serve

Method:

  1. Preheat your oven to 180 degrees C and grease 2 ramekins.

  2. Mix your chia egg and set aside for 5 minutes.

  3. While this thickens add all of the dry ingredients into a mixing bowl and stir.

  4. In a seperate bowl add in the milk, vanilla, maple syrup and orange zest and whisk.

  5. Pour your wet ingredients into the dry along with the chia egg and mix together.

  6. Divide amongst the ramekins (you may need a third as this is a generous serving.

  7. Place in the oven and bake for 30 minutes or until golden.

  8. Remove, let cool slightly before adding a dollop of coconut yogurt.

*You can cover these once cooled and keep in the fridge for upto 3 days. Just reheat when needed.
