PB Choc Chip Cookies

DF, V + RSF - makes around 10

Ingredients:

  • 1 1/2 cup almond meal

  • 1/4 cup coconut sugar

  • 1 tbsp meal (ground flax seeds)

  • 1 tsp baking powder

  • Pinch of pink salt

  • 1/4 cup choc chips

  • 1/2 cup peanut/nut butter

  • 1/4 cup melted coconut oil

Method:

  1. Pre heat your oven to 180 degrees C and line a baking tray with paper.

  2. In a bowl add all your dry ingredients.

  3. Now add the peanut butter and coconut oil into a blender and blitz together.

  4. Pour into your dry ingredients and mix well.

  5. Using a spoon scoop out a spoonful of mixture at a time, squeeze the mixture into your palm and press to create your cookies or roll into balls.

  6. Place in the oven and bake for 10-12 minutes.

  7. Remove and let cool on the tray.

  8. Store in an airtight container in the fridge.
