Tuna Pasta Salad

GF, DF and RSF - Serves 4

Ingredients:

  • 250g GF pasta

  • 400-500g canned tuna in spring water

  • 1/2 cup diced celery or cucumber or a mix of both

  • 1 cup of peas

  • 1/2 red onion diced

  • 100g spinach

Sauce:

  • 1/4 cup hulled tahini

  • 1/4 cup water

  • 2 tbsp lemon juice

  • 2 tsp dijon mustard

  • Salt and pepper to taste

  • 1/2 tsp chilli flakes (optional)

  • 1/2 tsp paprika

Method:

  1. In a saucepan of water add your pasta and cook to instructions.

  2. While this cooks, chop your celery, cucumber and onion and add to a bowl.

  3. Drain and add your tuna to the celery mix.

  4. In a seperate bowl, add all your sauce ingredients and whisk, set aside.

  5. Once your pasta is done, add the peas to soften. Drain and add to a large bowl along with the celery mixture.

  6. Pour over your sauce, add your spinach and gently mix together.
