Veggie Fritters

GF, DF and RSF

Ingredients:

  • 2 large carrots grated

  • 2 zucchinis grated

  • 2 spring onion finely chopped

  • 1 garlic clove finely chopped

  • 1/4 cup of dill chopped

  • 1/4 cup of coriander chopped

  • 1 tbsp ground cumin

  • 1 cup chopped spinach

  • 1/4 cup of buckwheat flour

  • 1/2 tsp of GF baking powder

  • 2 eggs whisked

  • Pinch of salt and Pepper

Method:

  1. In a medium size bowl, add in all the ingredients and whisk well to combine.

  2. In a heated fry pan add a spoonful of mixture at a time to create fritters.

  3. Cook for around 5 minutes either side until golden and cooked through.

  4. Serve with guacamole or lemon tahini sauce.
