Veggie Fritters
GF, DF and RSF
Ingredients:
2 large carrots grated
2 zucchinis grated
2 spring onion finely chopped
1 garlic clove finely chopped
1/4 cup of dill chopped
1/4 cup of coriander chopped
1 tbsp ground cumin
1 cup chopped spinach
1/4 cup of buckwheat flour
1/2 tsp of GF baking powder
2 eggs whisked
Pinch of salt and Pepper
Method:
In a medium size bowl, add in all the ingredients and whisk well to combine.
In a heated fry pan add a spoonful of mixture at a time to create fritters.
Cook for around 5 minutes either side until golden and cooked through.
Serve with guacamole or lemon tahini sauce.
