Cheesy baked cauliflower with sweet potato mash

GF, DF and RSF - Serves 4

Ingredients:

Sauce:

  • ·       ½ cup of coconut milk

  • ·       2 tbsp of nutritional yeast

  • ·       ¼ tsp of curry powder

  • ·       ¼ tsp of paprika

  • ·       1 tbsp of lemon juice

  • ·       ½ head of cauliflower florets

  • ·       2 large sweet potatoes peeled and cubed

  • ·       1/8 cup of almond milk

  • ·       200g green bean, stems removed

  • ·       1 garlic clove

  • ·       200g rocket

Method:

1.       Pre heat oven to 180 degrees C and line a baking tray.

2.       In a mixing bowl add all the sauce ingredients and mix well.

3.       Add the cauliflower florets into the sauce and coat well before spreading them out on the tray and placing in the oven. Bake for 20 minutes.

4.       Meanwhile add your sweet potato to a pot of boiling water and cook until soft.

5.       While this cooks, add your garlic and beans to a warm frypan with 1 tbsp of coconut oil, cooking for 3 minutes.

6.       Once your potato is cooked, drain and add in the almond milk, salt and pepper and mash.

7.       Place the potato on your plate and top with your cheesy cauliflower and garlic beans and fresh rocket.
