Chickpea Caesar Salad

GF, DF, V AND RSF - serves 4

Ingredients:

  • 1 can of organic chickpeas rinsed

  • 1 tsp paprika

  • Salt and pepper

  • 2 bunches of cos lettuce

  • 2 tomatoes diced

  • 1 lebanese cucumber diced

  • 1/4 cup sliced red onion

  • 1 cup of cashew aoili

  • 2 slices of sourdough toasted and sliced into cubes to top

Method:

  1. In a heated frypan, add 1 tbsp olive oil, chickpeas , paprika and a pinch of salt and pepper and cook for 6 minutes until golden.

  2. While this cooks, add all your salad ingredients into a bowl and mix.

  3. Once the chickpeas are done, add them to the salad.

  4. Stir through the aoli and top with sourdough croutons.
