Chickpea Caesar Salad
GF, DF, V AND RSF - serves 4
Ingredients:
1 can of organic chickpeas rinsed
1 tsp paprika
Salt and pepper
2 bunches of cos lettuce
2 tomatoes diced
1 lebanese cucumber diced
1/4 cup sliced red onion
1 cup of cashew aoili
2 slices of sourdough toasted and sliced into cubes to top
Method:
In a heated frypan, add 1 tbsp olive oil, chickpeas , paprika and a pinch of salt and pepper and cook for 6 minutes until golden.
While this cooks, add all your salad ingredients into a bowl and mix.
Once the chickpeas are done, add them to the salad.
Stir through the aoli and top with sourdough croutons.
