Fancy eggs on toast
DF, V + RSF - serves 1
Ingredients:
2 slices of sourdough or GF bread
2 eggs
1/4 avocado
1/2 tsp lemon juice
1 tsp chopped dill
Salt and pepper
1/4 tsp chilli flakes
Method:
Bring a small saucepan of water to the boil and add you eggs. Cook for around 6 minutes.
While this cooks add the avocado, lemon juice, pinch of salt and pepper and chilli flakes to a small bowl and mash together.
When your eggs are nearly done toast your bread.
Peel the boiled eggs and slice.
Spread the avocado mixture over the two pieces of sourdough and top with sliced egg.
