Superfood Granola Bars

GF*, FD, V + RSF - makes 6

Ingredients:

  • 1 1/2 cups GF quick oats*

  • 1/2 desiccated coconut

  • 1/4 cup vanilla protein powder (optional) or 1 tsp vanilla extract

  • Pinch of salt

  • 2 tbsp chia seeds

  • 2 tbsp hemp seeds

  • 1/3 pumpkin seeds

  • 1/2 cup crushed almonds

  • 1/2 cup pitted dates finely chopped

  • 1/3 rice malt syrup

  • 1/3 melted coconut oil

Method:

  1. Preheat your oven to 170 degrees C and line a slice tin with baking paper.

  2. In a medium mixing bowl add all the dry ingredients and mix.

  3. In a seperate bowl add the wet ingredients and mix.

  4. Pout the wet ingredients into the dry mixture and fold through ensuring all the oat mixture is coated.

  5. Scoop into the slice tin and press down firmly with the spatula.

  6. Place in the oven and bake for 30 minutes.

  7. Remove and let cool before slicing.
